Cooking with Appliances: Microwave Mug Recipes

Microwaves are handy to have around for thawing out meat or popping the occasional bag of popcorn, but did you know you can make homemade sweet-treats-for-one quickly and easily in your GE microwave?

Next time you are craving something tasty, but don’t want to turn the oven on, consider giving one of these delicious mug recipes a try!

 

Cupcake in a Cup

Perfect for celebrating that special someone’s birthday, this microwave cupcake has colorful sprinkles added right into the batter in order to create a fun, confetti-filled treat the birthday person won’t soon forget. Mix it up and microwave it before the celebration, or combine the dry ingredients in a bag and present them in a mug along with instructions for making the cake as a gift.

You’ll Need:

  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • 1 egg yolk
  • 2 tablespoons sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • 1 teaspoon decorator sprinkles
  • Frosting or whipped cream (if desired)
  • Microwaveable mug (1 oz or larger)

Place butter in mug and microwave 30–45 seconds or until completely melted. With the exception of the sprinkles, add all other ingredients to the butter and mix well with a fork. Gently stir in sprinkles.

Microwave batter in mug for 60–90 seconds, until the top is dry to the touch and the sides of the cake begin to pull away from the mug. Let cool, top with frosting or whipped cream if desired, and enjoy!

 

Microwave Brownies

Sometimes you just need a bit chocolatey goodness in your life. When this is the case, but you don’t need an entire batch of brownies, these single-serve brownies in a mug are the perfect solution. Just don’t let the rest of the family see you eating it or they’ll want one too!

You’ll Need:

  • 3 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 3 tablespoons cocoa powder
  • 3 tablespoons canola oil
  • 3 tablespoons water
  • pinch of salt
  • ½ teaspoon vanilla extract
  • Microwaveable mug (8 oz or larger)

Combine all ingredients in the mug. Microwave for 45–60 seconds, watching carefully to ensure ingredients do not boil over or burn. Let cool several minutes, add a scoop of ice cream or a dollop of whipped cream, and enjoy!

 

Lemon Cake in a Mug

Anyone who enjoys lemon bars will appreciate this amazing dessert. Make one for yourself, or a few to share. After all, they only take a few minutes to make, and everyone loves the person handing out cake, especially this cake.

You’ll Need:

  • 3 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • 1 large egg
  • 3 tablespoons granulated sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon grated lemon zest
  • 2 teaspoons lemon juice
  • 1 tablespoon powdered sugar
  • Microwavable mug (12 oz or larger)

Spray mug with non-stick cooking spray. In a small bowl, combine flour, baking powder, and granulated sugar. Using a fork, beat the egg, oil, lemon zest, and lemon juice into the dry ingredients. Pour mixture into mug and microwave for 90 seconds. Let cool for several minutes, sprinkle with powdered sugar, and enjoy!
