Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups white sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips

Instructions:

1. Preheat your oven to 350 degrees. Lightly grease two 9×5 inch loaf pans.

2. Next, in a large bowl, sift together the flour, cocoa, cinnamon, baking soda, baking powder, and salt.

3. Then, in a different bowl, combine the sugar and eggs until well mixed. Add the oil and vanilla, and combine. Then add in the zucchini.

4. Add the dry ingredients to the wet ingredients and stir until just combined; overmixing can result in a less tender bread. Finally, stir in the nuts and chocolate chips.

5. Divide the batter evenly into the two pans and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool in the pans for 10 minutes, then remove the breads from the pans and let them cool completely on a wire rack.

7. Enjoy this delicious moist and soft bread with those you love!
