Appetizer – Potato Skins – (Serves 6)
Preheat the Kitchen Aid oven to 450 degrees. Since you are cooking in a convection oven the heat will need to be reduced by about 25%. Your new oven will perform this task for you. Just follow the easy directions on the digital display!
With a knife of your choice, cut the potatoes in half. Scoop out the centers leaving about 1/4 inch around the inside of each potato. Cut the potatoes in half again and lightly spray the pulp side with some type of cooking spray.
In a small bowl, combine the garlic powder, chili powder, ground cumin, and pepper. Sprinkle pulp side of the potato with the rub. Place potatoes skin side down on a baking sheet.
Bake for 10 to 15 minutes, or until lightly browned. (Remember: The efficiency of a convection oven will reduce the cooking time–but your new Kitchen Aid will lead you through the steps.
In the meantime, using a food processor blend the cottage cheese, lime juice, green onions, and chili powder until smooth. Spoon about 1 teaspoon into each potato skin. Top each skin with an olive slice. Serve!
